Cottage Cheese Chocolate Mousse

Ingredients

  • Cottage cheese (about one cup, I used two percent fat)
  • Cocoa powder (two tablespoons)
  • Maple syrup (two tablespoons)
  • Vanilla extract (quarter teaspoon)
  • Chia seeds (two teaspoons)

Optional toppings
You can add crushed cookies, nuts, berries, banana slices, vanilla yogurt, or whipped cream if you like extra flavor or texture.

How to Make

  1. Put cottage cheese, cocoa powder, maple syrup, chia seeds, and vanilla extract into a blender.
  2. Blend everything until it is very smooth, please stop and scrape the sides with a spoon if needed.
  3. Scoop or pour the mixture into a jar or cup.
  4. Put it into the fridge and chill for at least thirty minutes so it gets thicker.
  5. Just before you enjoy it, add any toppings you like and then dig in.

Protein in Each Main Item

  • Cottage cheese: about 31 grams of protein in one cup
  • Cocoa powder: about 1 gram of protein per tablespoon
  • Chia seeds: about 1.5 grams of protein per teaspoon
  • Maple syrup: almost no protein
  • Vanilla extract: almost no protein

This mousse gives a good dose of protein especially from the cottage cheese. The chia seeds also add healthy fiber.
