Ingredients
- Chicken breast cut into pieces
- Barbecue sauce
- Orange juice
- Cumin
- Chili powder
- Garlic finely chopped
- Olive oil
- Salt
- Black pepper
- Mayonnaise
- Red wine vinegar
- Mustard
- Kale chopped
- Cabbage shredded
- Carrots shredded
- Cooked brown rice
- Corn
- Pickles
How to Make
- Mix barbecue sauce, orange juice, cumin, chili powder, and garlic in a bowl to make the chicken sauce. Keep a little sauce for the end.
- Heat olive oil in a pan and cook chicken with salt and pepper. Add most of the sauce and cook until the chicken is tender and coated. Remove and cut into cubes.
- In another bowl mix mayonnaise, vinegar, mustard, and garlic. Add kale, cabbage, and carrots. Mix well to make fresh slaw.
- Take bowls or plates and add rice at the bottom. Place chicken, slaw, corn, and pickles on top. Drizzle the saved sauce and serve warm.
